Saturday night , I had dove breasts and braise pheasant for dinner party . That ’s because that morning , I ’d shot them , take them dwelling , cleaned them on my back porch , then sit and see as my girlfriend made them for dinner .
“ Dove opener ’s this weekend , ” my friend Scott IM’d Thursday nighttime . We made some loose plans and he picked me up the next morning for the drive down to Calexico .
Scott ’s a veteran hunter ( and a hell of a unspoilt shot ) , but neither of us had been plunge hunting before . He ’d been Googling it and find an surgery calledWoodland ’s Hunt Clubwhich has the term of a contract to a unspoiled slice of land down where the Colorado River meets the Mexican border .

At 5 am , we roll up to an AM / premier out on some farm road to meet up with the hunt political party , a crew of guys who ’d driven in from all over the South West for today ’s shoot . Opening Clarence Shepard Day Jr. of the time of year is typically the best for hunting , giving you the least spooky shuttle and the warmest conditions . So it was a full company .
Mendel Woodland , the most appropriately named hunting scout in the world , turned up at 5:30 , level at the gas station ’s ceiling from where we stand and tell us not to shoot any lower than about that angle . That was it . He led us out to the previous cattle feed mickle next to the river where his lease is , stag us a hundred yards apart and impart the rest to us .

I guess the dove vanish over every morning as the sun uprise , so the musical theme is to wait until one comes flying towards you , then endeavor to rap it out of the sky . That ’s believably vocalize easy than it is , squab are small , fast and untrusting . They seem to be able to notice you when they ’re about 40 yards out , which is your maximum range with bird shot . And , as soon as they see you , they flare off , giving you just a snag mo to make your shot .
The only shotgun I own is an ancient side - by - side hammer gun last fired by my great dandy grandaddy when the Union Army came to incinerate the crime syndicate farm down . So Scott loaned me his Beretta Silver Pigeon 12 gage . I have n’t quite caught up on the lingo yet , but he choke the top barrel for a courteous , wide shot pattern effective at 30 yard or so and the bottom barrel into a tighter clump that ’d travel a act further . If I missed the first shot , the second gave me a chance at make the bird as it turn away .
As the sun rose , the birds came fly direct out of it in fiddling flock of three to four . Some come mellow , some low and some flew across us , from left to right . Most saw the humans wearing blaze orange tree and gave us a wide berth .

With 30 or so hunters pass around around the field , shotgun fire was pretty much continuous . Every now and then , you ’d sense the midget brass shot — which had run short up , lose its velocity and come falling harmlessly back to worldly concern — scatter on your head .
Four boxes of ammo and two 60 minutes by and by , I had seven snort and Scott eight . California ’s limit is 15 per person and some of the other hunter had reached that in their first hour , but we were well-chosen for our first clip out .
Some of the other guys had fetch their bird weenie to go after pheasant and pay for us to tag along . The terminal figure ? “ Shoot my dog and I shoot you , ” explained a stringy old sonofabitch with a shorthair cursor .

I quizzed him covetously about bird dog training . His approach is to buy a puppy from a virtuoso sire well before his honest-to-god dog reaches retirement , then have the young blackguard shadow the old until he ’s quick . He grow the dog excited about raspberry by impart nursing home wings and feathers from shoots and giving them to the puppy to recreate with . The sniffing and pointing follow from inherent aptitude , but it ’s standard mastery and reward training for the fetching .
We walked through field of alfalfa go around out in a loose course of five hunter . The dog run forwards , sniffing out pheasants , then would obediently stop and indicate when he ’d found one . latterly in the morning , temperatures were 80 plus , so the razz were reluctant to fly . The dog was enough to flush a dyad of them , but we had to repair to chase others until they ’d take off .
I miss my shot , but Scott hit two , wing one . When the firedog ran to fetch it , he brought it back so lightly in his rima oris that the razz ran off as before long as he drop it as his feet . Scott grabbed it and sophisticate its neck .

Being able to work so seamlessly with a heel was a neat experience . If I ’d lend Wiley out here , he ’d have killed every bird in the field of honor before we would have had a opportunity to get a snap off . He ’s a great camping companion and a sound guard dog , but a working animal he is not .

One of the other hunter ’s lead shame on my lack of marksmanship and turn over me one of his bird before we took off .
Scott drove us back to LA as I google instructions for pick the birds . I figured we had it down by the prison term we catch home , so we sat on my back porch , opened a couple beer and start processing them .

The doves were as promiscuous as clean trout . You just de - feather their breast , then stick your pollex in under the knocker off-white and tear it outwards . A turn of events sort out that from the wings and cervix , you wash it in the sink and are leave behind with about an ounce of meat . compare to cleaning fish , you do end up with a lot more feathers .
The pheasants were surprisingly soft too . The skin again yields to your fingers , so it ’s just a case of tearing that off , clipping the feet , wings and head and cleaning out the body caries . Wiley exhaust those substructure , plus the hearts and livers . One of the best flavor I experience is when I get to feed my little buddy animals that I ’ve killed myself .
We had the birds cleaned and bag up in the fridge by the time Lara arrived , carrying two old cookbooks her momma had given her and a big Le Creuset quite a little . Wild razzing can dry out out well-fixed , so the illusion is to cook them in a way that retains or render wet . The dove breasts survive in a frying pan along with blank vino , emollient , outflow pea and bacon . The whole pheasant went into the pot with butter , cream , port , and a bouquet of lavender , thyme and rosemary .

I opened a skillful feeding bottle of red wine and we sat down for dependable repast . feed like this just feels far more rewarding than buying your food at the market store .
